I N G R E D I E N T S

  • 2 cups old-fashioned rolled oats

  • ¾ cup nuts/seeds of your choice

  • ¼ teaspoon salt

  • ¼ teaspoon cinnamon

  • ¼ cup melted coconut oil, melted

  • ¼ cup maple syrup

  • ½ teaspoon vanilla extract

  • ½ cup additional mix-ins (chocolate chips, dried fruits)

  • Preheat the oven to 180ºC and line a sheet pan with parchment paper.

  • Place the oats and nuts/seeds into a mixing bowl, along with the salt and cinnamon.

  • In a separate bowl, whisk together the coconut oil, maple syrup and vanilla extract, until homogenous.

  • Pour the wet ingredients into the dry, and stir until the dry ingredients are evenly coated.

  • Add the mixture into the sheet pan, and press down gently.

  • Bake for 10 minutes, and then stir before once again pressing down (for extra clumps!)

  • Bake for a further 10 minutes, making sure the oats don’t start to brown excessively.

  • Take out of the oven, and allow to cool completely before serving.
