2 cups old-fashioned rolled oats
¾ cup nuts/seeds of your choice
¼ teaspoon salt
¼ teaspoon cinnamon
¼ cup melted coconut oil, melted
¼ cup maple syrup
½ teaspoon vanilla extract
½ cup additional mix-ins (chocolate chips, dried fruits)

S T E P S
Preheat the oven to 180ºC and line a sheet pan with parchment paper.
Place the oats and nuts/seeds into a mixing bowl, along with the salt and cinnamon.
In a separate bowl, whisk together the coconut oil, maple syrup and vanilla extract, until homogenous.
Pour the wet ingredients into the dry, and stir until the dry ingredients are evenly coated.
Add the mixture into the sheet pan, and press down gently.
Bake for 10 minutes, and then stir before once again pressing down (for extra clumps!)
Bake for a further 10 minutes, making sure the oats don’t start to brown excessively.
Take out of the oven, and allow to cool completely before serving.
